Market potential and consumer acceptance of sweet potato flour biscuits: A quality evaluation perspective

Abstract: This study explores the market potential and consumer acceptance of sweet potato flour biscuits, a product with rising interest due to its health benefits and nutritional value. The study, conducted in a local market in Nepal, aimed to evaluate the quality of sweet potato flour biscuits through consumer feedback and market analysis. A sample of 50 participants was surveyed to assess their preferences regarding taste, texture, aroma, appearance, and health benefits. The results indicate that the majority of consumers find sweet potato flour biscuits appealing, especially for their taste and health benefits. This paper discusses the findings and the implications for producers looking to introduce sweet potato flour-based products to the market, along with recommendations for improving market penetration.
